I came across a recipe that I thought sounded good and then I tweaked it to my own standards. It went like this.
Mexican Gumbo (I was going to call it Mexican Dump but anything with dump in the title just doesn't sound appealing-- right?)
4 chicken breasts (frozen, thawed-- whatever)
1 can diced chilies
1 Can pinto beans (drained) (you can use black beans if you like that better)
1 Can cream of chicken soup
1 Cup salsa (the hotter, the spicier the dish)
1 packet taco (or fajita) seasoning
Cook in the Crock Pot for a few hours. (until chicken is shreddable) When you are ready to serve, take out the chicken and shred it. Return the chicken to the pot and stir it up. Serve with a dollop of sour cream and some cheddar cheese sprinkled over the top.
You can tweak this recipe any way you like. You can try it with pork or beef. You can serve it in a burrito, over rice, as a taco salad, with chips, heck you can even toss in some lettuce if you'd like. That's the beauty of this thing. You can have it just how you like it. Yum!

I was feeling EXACTLY the same way that were. 4:00 pm would come and I would wonder what I could whip up. We were having the same things every week. I'd spend $100+ at the grocery store and be like, shoot, there's nothing here to even put together an entire meal...talking to other moms, we were all feeling this way.
Thus, my blog was born...

Yes! Wasn't this the recipe that was on the back pulletin at church? I grabbed that recipe a couple months ago and finally made it like 2 weeks ago. We loved it! It was so yummy. The best part is it's easy. Kind of reminds me of chilli, mexican style. Glad he liked it and doesn't have to be tortured anymore!

And he even went on a mission to Mexico. He lost lots of weight though. Think Miguels and what he eats there. I like Mexican food and I always make it the way I like it best.

I like the gun that is pointed to his head. Next see if you can get him to eat red sauce on pasta. Or has he tasted it and decided that it is good.
